  • 2 Dry Red Chillies, broken into two pieces
  • 2 Bay Leaves
  • 1 medium Onion, chopped
  • 1/4 cup Cashew Nuts (+ 1/2 cup boiling water, blended into paste)
  • 1/2 tsp Red Chilli Powder
  • 1/2 tsp Turmeric Powder
  • 1/2 tsp Garam Masala Powder
  • 1 tsp Coriander seeds (grounded)
  • 1 tsp Salt
  • 1 can Coconut Milk
  • 4 large Potatoes, cubed
  • 1/2 large sweet potato
  • 1/2 cup water
  • 1 can chickpeas
  • 1 punnet Cherry Tomatoes
  • 1 tablespoon Fresh Coriander Leaves, chopped, to serve
