Potato Salad

Ingredients

  • •4 large potatoes
  • •1.5 cups of mayo
  • •2 TBSP of yellow mustard
  • •1/2 tsp each of salt, pepper, garlic powder, and paprika 4 chopped hard boiled eggs
  • •6 pieces of cooked bacon, crumbled
  • •2 green onions, chopped

Directions

  1. •peel, wash, and chop potatoes
  2. •boil those until they are fork tender
  3. •while potatoes are boiling, add mayo, mustard, salt, pepper, garlic powder, and paprika to a bowl and mix well
  4. •add green onions, 3 of the eggs, and 5 pieces of bacon and mix together (I save one egg and one piece of bacon for the top of the potato salad)
  5. *once potatoes are cooked, add them to the bowl and mix everything together
  6. • chill in the refrigerator for at least a couple hours
  7. •before serving top with the chopped egg and bacon that you saved
