Ranch Seasoned Roasted Potatoes

Ingredients

  • - 1 ½ pounds unpeeled Yukon Gold potatoes, cut into 1-inch pieces
  • - ¼ cup low fat ranch dressing (5WW)
  • - 1 teaspoon onion powder
  • - 1 teaspoon dried dill
  • - ½ teaspoon garlic powder
  • - ½ teaspoon salt
  • - ¼ teaspoon ground pepper
  • - Chopped fresh herbs (such as dill, chives and/or parsley) for garnish

Directions

  1. 1. Preheat oven to 425°F. Line a large rimmed baking sheet with parchment paper.
  2. 2. Toss potatoes with dressing, onion powder, dill, garlic powder, salt and pepper in a medium bowl. Spread in a single layer on the prepared baking sheet.
  3. 3. Roast the potatoes, stirring once halfway, until crispy on the outside and tender inside, 25 to 30 minutes. Sprinkle with herbs before serving, if desired.
