Roasted Brussels Sprouts

Ingredients

  • 1 pond Brussels sprouts, trimmed and cut in half lengthwise
  • 1 tablespoon plus 1 teaspoon olive oil
  • 1 teaspoon finely grated lemon zest
  • Salt and pepper
  • 1/4 cup grated Parmesan cheese

Directions

  1. Preheat oven to 400.
  2. In a large bowl, toss the Brussels sprouts with oil, and lemon zest and season with salt and pepper to taste. Transfer sprouts to sided baking pan and roast until just tender, about 20 minutes, giving the pan a good shake halfway through cooking time so the sprouts brown evenly.
  3. Return the sprouts to the large bowl, toss with Parmesan cheese and serve.
