Sandwich: Chicken Panini

Ingredients

  • Chicken Breast, grilled
  • 2 Thin slices of tomato
  • Arugula or Leaf Lettuce
  • 2 Slices of fresh Mozzarella Cheese
  • 1oz Basil Aioli (Basil Pesto mixed with mayo)
  • 1 Focaccia Bread, sliced in half and toasted

Directions

  1. Cut Focaccia Bread in half and toast.
  2. Season chicken breast with salt & pepper and Italian herbs on both sides.
  3. Grill chicken breast until done (165 degrees internally).
  4. Cut chicken into large chunks.
  5. Spread basil aioli on both sides of Focaccia Bread.
  6. Place Arugula or Leaf Lettuce on bottom half of bread.
  7. Set chicken on top of lettuce.
  8. Add Mozzarella on top of chicken and top with sliced tomatoes and top half of bread.
  9. Set in pre-heated panini press. Set the press to press down on sandwich until warm and cheese has softened.
