Ingredients

  • 5 large carrots
  • 1 large onion, diced
  • 1 c veggie broth
  • 1 tsp fresh or dried thyme
  • 1/2 tsp dried mustard
  • 4 chopped garlic cloves
  • 1 tsp peppercorns
  • 4 lbs corned beef brisket
  • Head of cabbage coarsely chopped
  • 16 c brown rice pasta; cooked

Directions

  1. Put carrots, onion, broth, thyme, mustard, garlic, bay leaf, peppercorns & 4 cups of water into crock pot. Lay brisket on top and cook on high for 6 hours. Add cabbage and cook for 1 additional hour. Serve over cooked pasta
