Sourdough Bagels

Ingredients

  • 240 g active sourdough starter
  • 180 g warm water
  • 40 g honey or sugar
  • 10 g salt
  • 420-480 g all purpose flour
  • For boiling
  • Large pot of water when boiling add 1 tbsp baking soda and honey or sugar

Directions

  1. Mix dough
  2. Kneed 8-10 minutes until smooth and firm
  3. Rise covered let rest 4-6 hours until slightly puffy
  4. Shape, divide into 8 pieces (100-110 g each) roll into balls and poke a hole to shape bagels
  5. Let rest 20-40 minutes
  6. Boil in water mixture for 30-60 seconds per side, if bagels sink let rest longer
  7. Bake at 425 F for 18-22 minutes until golden brown
  8. Let cool 10-15 minutes before cutting
