Spiced Cauliflower and Chickpeas

Ingredients

  • 1 medium cauliflower, cut into florets
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1/2 cup dried cranberries
  • 1/4 cup toasted almonds or pine nuts (optional)
  • 2 tbsp fresh parsley or thyme, chopped (for garnish)

Directions

  1. 👉 Step 1: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. 👉 Step 2: In a large bowl, toss cauliflower florets and chickpeas with olive oil, cumin, smoked paprika, turmeric, cayenne (if using), salt, and black pepper until evenly coated.
  3. 👉 Step 3: Spread the mixture evenly on the prepared baking sheet. Roast for 25-30 minutes, tossing halfway through, until the cauliflower is golden and slightly crispy.
  4. 👉 Step 4: Remove from the oven and transfer to a serving bowl. Stir in dried cranberries and toasted almonds or pine nuts if using.
  5. 👉 Step 5: Garnish with fresh parsley or thyme and serve warm as a side dish or a light meal.
