Split Pea Soup With Ham

Ingredients

  • Onion chopped 1 large
  • Garlic 2-4 cloves as desired
  • Olive oil @2 Tablespoons ish
  • Carrots-2 diced
  • Celery- 1 stalk, including leaves chopped
  • 1-2 Yukon gold potatoes
  • Ham diced 1.5 cups or as desired
  • Thyme 1 tsp fresh
  • Bay leaves 2
  • Salt/pepper
  • Chicken broth/stock 6 cups
  • Split peas 1 lb either soaked overnight or use rapid method and rinse

Directions

  1. Chop 1 lg onion and mince 2 garlic cloves. Sauté in olive oil. Add diced carrots and celery, cook on low until veggies are soft. Add ham and slightly "brown". Add herbs, s/p to taste. Add cut up potatoes. Add chicken broth/stock slowly. Add split peas, cook over low heat several hours. Remove bay leaves and serve with crusty bread!
