Tomato, Cumin & Vegetable Rice

Ingredients

  • 1 Tbsp olive oil
  • 2 Red onions
  • 1 Res capsicum
  • 2 Cloves garlic
  • 1 Tsp each ground coriander, cumin and paprika.
  • 1&1/2 Cups basmati rice
  • 400g can diced tomatoes
  • 3-4 Cups vegetable stock
  • 200g Green beans
  • 1/2 Cup frozen peas
  • 1/2 Cup frozen corn

Directions

  1. 1. Dice onion and capsicum then sautée for 5 minutes or so until soft.
  2. 2. Crush garlic and add to pan along with spices. Sautée for 1-2 minutes until fragrant.
  3. Turn up the heat and add rice, stir to coat the rice and let it toast slightly. Then add tomatoes and stock.
  4. 4. Allow mixture to boil, then lower the heat cover and cook for 30 minutes.
  5. 5. When 25 minutes have elapsed add the green beans, peas and corn then cover for the final 5 minutes
