Tortilla Soup
Ingredients
- 1/2 poblano pepper, diced
- 3 cloves garlic, minced
- 1/4 c. yellow onion, minced
- 1 small tomato, diced
- Oil for sautéing
- 2 T butter
- 1/4 c. Flour
- 1 c. Boiling water
- 1T chicken bullion
- 3 c. Milk
- 1 can black beans, drained and rinsed
- 1 heaping c. shredded cheese
- 1 T taco seasoning
Directions
Sauté pepper, onion, tomato and garlic in oil
Add butter and let melt
Add flour and cook until smooth paste
Dissolve bullion in water
Add broth to pan and stir until paste absorbs it
Add milk one cup at a time, combining each time
Add beans, cheese and taco seasoning
Simmer for 20 minutes
