  • 1 pound frozen udon noodles
  • 1 pound ground pork
  • 2 eggs
  • ¼ cup thinly sliced scallions
  • 1 Tbsp. soy sauce
  • ¼ cup potato starch (I’ve found that cornstarch and all-purpose flour work too)
  • 2 cloves garlic, grated
  • 1 Tbsp. freshly grated ginger
