Goat Cheese Stuffed Piquillo Peppers

Ingredients

  • 1 jar of Matiz Organic Piquillo Peppers
  • 5 oz goat cheese
  • 2 sprigs fresh thyme
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lime

Directions

  1. Combine thyme, zest from 1 lime, and goat cheese together. Stuff each pepper with the cheese mixture (about ½ oz of goat cheese). Place on foil lined baking sheet and drizzle with olive oil and garlic. Broil until cheese is melted and oil is sizzling, about 8-10 minutes. Serve with crusty bread.
