Ingredients

  • * 6 large eggs
  • * 1 cup grated cheese
  • * 1 cup chopped spinach
  • * 1 cup chopped mushrooms
  • * 1/4 cup almond milk
  • * 1/4 cup flour
  • * 1/2 teaspoon onion and garlic powder
  • * Salt and pepper to taste
  • * Olive oil spray

Directions

  1. * Preheat your oven to 175°C. Grease a muffin tin with spray.
  2. * In a mixing bowl, whisk together the eggs and milk until well combined.
  3. * Stir in the cheese, spinach, mushrooms, flour, dried herbs, salt, and pepper.
  4. * Divide the mixture evenly among the muffin cups, filling each about 3/4 full.
  5. * Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden on top.
  6. * Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Kyra Hungerford, RDN στο Instagram: "how to make🤍🫐🍋 1 and 3/4 c flour (all purspose flour - optional to add 2 tbsp extra flour if batter comes out too runny) 3/4 c sugar 1 tsp baking powder Pinch of salt 1 egg, beaten 1/2 c milk 1/4 c melted butter 1 tbsp lemon zest 1 tbsp lemon juice 1 6oz container vanilla Skyr or use greek yogurt instead 1 c fresh blueberries mix dry and wet ingredients into 2 separate bowls, slowly add the wet ingredients into the dry until combined then fold in the blueberries. Pour into a bread pan lined with parchment paper. Bake at 350°F for about 60 min. Let cool and then top with glaze & enjoy!"
