Empanadas
Ingredients
- All ingredients listed will not be used. This is a compilation of several recipes. Also, it is incomplete. Fruit, vegetables and a variety of meats and peppers are good compliments. The only limitation to what fillings to use is your imagination. This is a fun recipe to play with and experiment!
- Butter, shortening, olive oil or lard
- 1-2 Onions, chopped
- Ground Beef and or pork
- 2 teaspoons paprika
- 1/2 teaspoon crushed red pepper flakes
- 1 teaspoon ground cumin
- Minced garlic
- 1 teaspoon oregano
- Raisins
- Green or black olives, chopped
- 2 eggs, beaten
- Pastry sheets or Goya Discos or frozen pastry rounds
- 1/2 teaspoon salt and pepper
- 1 teaspoon baking powder or corn starch
- 1/4 cup tomato sauce
- 2 tablespoons sofrito
- 1 packet sazon (Goya)
- Corn oil for frying

Directions
This is basic preparation, adjust for desired results. Develop your own finished product.
Cook meat in frying pan until browned. Add desired spices and ingredients. Simmer for about 60 to 90 minutes.
Prepare pastry. Goya discos are really easy and simple. Spoon about 1 tbsp. meat mixture into middle, fold in half to form a half moon. Moisten edges with water and pinch to seal closed.
Preheat oven to 350. Bake on parchment paper on cookie sheet about 25 minutes or until golden brown. You can brush each empanada with egg wash. Prick each empanada with a fork near the curl to allow steam to escape during cooking.
