Start by slicing your halloumi cheese. Pour hot water over the slices and soak for 15-20 minutes (this technique will soften the cheese and reduce its saltiness before cooking).
2. Meanwhile, add cucumbers, tomatoes and red onions to a bowl. Season with salt and pepper, squeeze some lemon juice and add a drizzle of olive oil. Give it a gentle mix.
3. Mix the ingredients for the tzatziki together and chill until ready to serve.
4. Toss the halloumi slices with dried oregano, some pepper, a drizzle of lemon juice and olive oil. Cook on medium-high heat for 1-2 minutes on each side until golden.
5. Spread the flatbread with tzatziki sauce, top with the cucumber, tomato and onion mix, and the halloumi slices. Garnish with fresh parsley and chilli flakes. Wrap up and serve. Enjoy!
