  • ½ head of garlic, sliced in half through the cloves
  • 1 bunch thyme
  • 1 branch of bay leaves, leaves picked
  • Paris potatoes
  • 9 desiree potatoes
  • 60 ml (¼ cup) olive oil
  • 3 small French shallots, trimmed and peeled
  • 3 tbsp unsalted butter
  • 2 thyme sprigs, leaves picked
  • 1 tbsp finely chopped flat-leaf parsley
