Lebanese Potato Salad

Ingredients

  • 6 medium potatoes
  • 4 green onion, finely chopped
  • 1 medium tomato, diced
  • ¼ cup fresh parsley, chopped
  • 1 tsp. dried mint, crushed
  • lemon or sesame seed dressing

Directions

  1. 1. Peel and boil potatoes until tender crisp. Drain.
  2. 2. Cut into cubes and place in salad bowl.
  3. 3. Add parsley, onions and dried mint.
  4. 4. Combine either salad dressing ingredients in a small bowl and mix well.
  5. 5. Pour dressing over potatoes and toss to coat.
  6. 6. Let marinate in refrigerator for 3-5 hours before serving.
