MUSHROOM SOUP WITH MIDDLE EASTERN FLAVORS

Ingredients

  • 1 lb. crimini and white mushrooms, sliced
  • 1 heaping cup (20 Grams) of dried shitake mushrooms
  • (rehydrate in 1 cup of boiling water)
  • 1/2 onion diced
  • 1 small shallot, diced
  • 3 - 5 cloves ROASTED garlic
  • 2 Tbsp olive oil, separated
  • 1/2 Tbsp butter
  • 3 cups chicken broth.  homemade is best but i only had 2 cups so i had to use 1 cup of canned low sodium
  • 1/2 cup white wine
  • 2 Tbsp Garam Masala
  • 1 tsp salt...more or less to taste
  • fresh ground pepper
