Ingredients

  • Starter
  • 1 cup (250 ml) all-purpose flour
  • 1 ½ tbsp (22.5 ml) instant yeast 
  • ¾ cup (180 ml) water
  • Dough 
  • 4 ¾ cups (1180 ml) all-purpose flour, plus more for dusting
  • ¾ cup (180 ml) sugar
  • 1 ½ tsp (7.5 ml) salt
  • 1 vanilla bean, split open lengthwise and seeds scraped (or 1 tbsp/15 ml vanilla extract)
  • Zest of 2 lemons 
  • Zest of 2 oranges 
  • ½ cup (125 ml) honey 
  • 5 egg yolks
  • 4 eggs
  • 1 cup (250 ml) unsalted butter, cubed and softened
  • 1 cup (250 ml) chopped dark chocolate  
  • 1 cup (250 ml) dried figs, hard stems removed, diced
  • 1 cup (250 ml) chopped roasted almonds 
  • Pearl sugar, to taste
