1. Wash rice thoroughly, drain and mix with milk in a heavy saucepan.
2. Bring to a full boil, stirring constantly.
3. Reduce heat to medium; add sugar and simmer, stirring constantly. Continue to boil and stir constantly until rice is tender and mixture thickens (about 1 hour).
4. Remove from heat and add orange blossom water or vanilla if used.
5. Pour into a large bowl. When cool, cover tightly with plastic wrap.
*Tip- Heat milk until warm before adding rice to prevent the rice from sticking to the bottom of the pot.
