Roasted Vegetable Pizza

Ingredients

  • 1 eggplant, peeled & cubed
  • 1/4 cup scallions, cut into small rounds
  • 1 lb. plum tomatoes, each cut into about 8 pieces
  • 1 cup chopped zucchini
  • 1 tsp. thyme
  • 1 tsp. oregano
  • 4 cloves garlic, thinly sliced (optional)
  • Salt & pepper to taste
  • 3 tbsp. olive oil
  • 3 tbsp. parmesan cheese

Directions

  1. Put all of the vegetables on a large baking pan. Sprinkle on thyme, oregano, garlic, salt & pepper and toss all ingredients to combine. Drizzle on the olive oil & toss again.
  2. Roast the vegetables in a preheated 425 degree oven for 5 min. Remove pan, toss vegetables, and put back in the oven for an additional 5 min. Remove pan & allow to cool.
  3. Spread all of the vegetables evenly across the pizza shell. Sprinkle on the parmesan cheese.
  4. Bake the assembled pizza on the preheated stone for 10-15 min. until the dough is crisp & brown.
