Clean chicken and remove skin. Cover the bottom of a pot with canola oil. Next, sauté chicken on medium heat (10 minutes on each side). Add water about two inches above the chicken. Cook for one hour on medium heat.
Rice:
Put canola oil in the bottom of a pot. Brown the meat. Add rice, salt, pepper, cinnamon, and all spice. Add 5 cups of chicken stock from the pot you cooked the chicken in. Cook the rice until it is tender. Stir the rice. Pull the chicken apart and add it to the top of the rice.

Brown in a pan with butter and put on top of the chicken and rice.
