Salmon Burgers With Salsa Verde Relish

Ingredients

  • ~~ For the Salmon Patties ~~
  • 500g salmon, skinless and boneless
  • 1/2 cup fresh breadcrumbs
  • 1 egg, lightley beaten
  • 2 spring onions
  • Zest of 1 lemon
  • 2 tbsp chives, chopped
  • 1 tbsp garlic, minced
  • 1 tbsp olive oil
  • 1 tsp red wine vinegar
  • 1/2 tsp tabasco sause
  • Pinch of salt and fresh ground pepper
  • 4 toasted seasame seed buns
  • Rocket, washed
  • ~~ For the Salsa Verde ~~
  • 3 tbsp capers
  • 2 dill pickles, coarsley chopped
  • 1 cup flat-leaf parsley, leaves only
  • 1 cup basil, leaves only
  • 1 cup mint, leaves picked
  • 1 cup dill
  • 1 tsp wholegrain mustard
  • 2 tbsp vinegar
  • 1 lemon, juice & zest
  • 7 tbsp extra virgin olive oil
  • Salt & black pepper, to taste.

Directions

  1. Coarsley chop the Salmon
  2. Place breadcrumbs, egg, spring onion, lemon, chives, garlic, olive oil, vinegar, Tabasco, salt & pepper into a food processor and pulse to a coarse texture; do not over process
  3. Gently combine the Salmon with the breadcrumb mixture
  4. Form into patties, +\ _ 8cm wide and 2cm thick
  5. Place all of the salsa verde ingredients into a blender and oulse until well blended, but not too smooth
  6. Preheat a grill pan on medium - high heat and brush with oil
  7. Grill patties for 3-4 minutes per side, or until just cooked through, turning carefully
  8. Serve immediately on toasted buns with rocket and a dollop of salsa verde
