Place breadcrumbs, egg, spring onion, lemon, chives, garlic, olive oil, vinegar, Tabasco, salt & pepper into a food processor and pulse to a coarse texture; do not over process
Gently combine the Salmon with the breadcrumb mixture
Form into patties, +\ _ 8cm wide and 2cm thick
Place all of the salsa verde ingredients into a blender and oulse until well blended, but not too smooth
Preheat a grill pan on medium - high heat and brush with oil
Grill patties for 3-4 minutes per side, or until just cooked through, turning carefully
Serve immediately on toasted buns with rocket and a dollop of salsa verde
