Sweet Potato Casserole

Ingredients

  • Casserole:
  • 3 cups cooked, mashed sweet potato or yams
  • 1/2 - 3/4 cups brown sugar
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 3 Tbs butter, melted
  • 2 eggs, lightly beaten
  • Topping:
  • 2 Tbs butter, melted
  • 2 Tbs all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup chopped pecans
  • Marshmallows (optional)

Directions

  1. Peel, boil, and mash the sweet potatoes.
  2. Preheat the oven to 350 degrees.
  3. Lightly grease a large baking dish with butter.
  4. In a large bowl, combine the sweet potatoes, sugar, milk, vanilla extract, salt, and butter.
  5. Add eggs and mix well.
  6. Transfer to the baking dish.
  7. To make the topping, combine the butter, sugar, flour, and pecans in a bowl.
  8. Layer the topping on the casserole. Add marshmallows for extra sweetness.
  9. Bake for 35-40 minutes.
