Wilted Endive (Hinbee)

Ingredients

  • - 4 bunches of endive
  • - 1 lemon
  • - 2 large onions
  • - 6 cloves of garlic
  • - salt and pepper
  • - olive oil

Directions

  1. Slice onions and garlic
  2. Was endive and chop green leaves 2 inches thick
  3. Put olive oil in a pot and add onions and garlic
  4. Cook on medium to low heat until onions and garlic are caramelized
  5. Remove half of the onions only onto a plate
  6. To the pot, add the endive, salt and pepper, and a splash of water
  7. Place kid over pot and toss the mixture a few times
  8. Remove lid and make sure onions are mixed well with the endive
  9. Allow to wilt on medium low heat for about 20 minutes or until endive is tender
  10. Move to a dish, sprinkle lemon juice over the endive and added the reserved onions on top
